Accor, a global hospitality leader, wields AI and teamwork to slash food waste. With 5,500 hotels serving 200 million meals worldwide, precise measurement is paramount. Accor promotes Gaïa, its unique online reporting tool, for waste quantification and eco-performance tracking. 71% of properties use it, with plans for full adoption by 2025.

Accor teams up with the International Food Waste Coalition to standardize food waste metrics, aiming to surpass a 50% reduction goal by 2030. They've also partnered with AI-driven startups like Winnow, Orbisk, and Fullsoon to refine operations and curb waste. Employee training and customer engagement enhance their waste-reduction efforts.

Iberostar Hotels, using Winnow's AI tech, achieves an 11% cut in waste and saves 1,264 tons of CO2. Buffet food waste, a major problem, is targeted with Lumitics' smart waste tracker, which deploys AI, sensors, and computer vision to identify waste and optimize portion sizes. This innovation extends to cruise ships and airlines, advancing precise catering.
